
Our whiskey is a sour mash of 65% corn, 20% malted barley, and 15% rye fermented at colder temperatures, but without the aid of refrigeration. Fermentation takes more time this way, but the result is a softer whiskey that develops subtle flavors such as pear, and raspberry. We distill the fermented mash in our small batch copper potstill on grain to extract fuller and rounder flavors. In keeping with practices of traditional aging, we barrel the distillate at the Pre-Prohibition standard of 98 proof in virgin white oak American barrels, so that the barrel may add subtle notes of oak and vanilla, and does not overpower the finished whiskey.
