
We played with old-world Scottish and Irish techniques to produce Doc’s Triple Cask Bourbon. After years of exploration finishing whiskies in a variety of casks, we've discovered something special using Oloroso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of curated producers. The delicate characteristics of past occupants mingle and marry with the bold aspects of our straight bourbon whiskeys, enhancing and adding layers while accentuating the bourbon itself. Each release is then meticulously blended in ex-Cognac Foeders prior to bottling, imparting a dry nuttiness, a subtle sweetness, and an extended finish.
