While tasting through stocks of barrels for Batch 1, more wheat barrels were earmarked and sat aside that had more unique qualities like red fruit and citrus notes. Blending in more 15 year into Batch 2, we then layered 8.5 year bourbon into this blend with similar red fruit notes as the base wheat bourbon. Cask strength at 110.52, this hits like vintage whiskey with a silky mouthfeel and lots of weight. For fans who enjoy Brook Hill selections from Life of Luxe or Emerson Shotwell, Batch 2 carries some of those same well aged flavors. Keeping with the theme of wanting the wheat bourbon shining, we worked hard to only pair barrels that would compliment and not take away.
Tasting Notes
Aroma
Vanilla custard, raspberry candy, peanut brittle, orange zest, nougat, honeyed grain, barrel char, caramel, rickhouse floor, maple, waffle batter.
Palate
Dense mouthfeel. Strong waffle batter and vanilla custard, charred oak, spiced caramel, maple sugar, cardamom, black pepper, vanilla wafer, and funky brown sugar.
Finish
Long length finish. Bitter oak and vanilla wafer hit in the foreground, creating a brief but intense battle of flavors before giving way to a wave of rich caramel, maple, waffle batter, and whipped sugars. The underlying spice and substantial oak notes perfectly complement the decadent, heavy profile, resulting in a finish that feels like a delightful buffet of treats.
